Ingredients

  • 2 Chicken breasts
  • 2 tablespoons Cajun seasoning
  • 8 ounces Pasta of choice
  • 1 cup Heavy cream
  • 2 cups Chicken broth
  • 1 Bell pepper, chopped
  • 1 Onion, chopped
  • 3 cloves Garlic, minced
  • 2 tablespoons Olive oil
  • Salt, to taste
  • Pepper, to taste
  • Parmesan cheese, optional

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onions, bell peppers, and minced garlic; sauté until softened.
  3. Stir in the chicken and Cajun seasoning, cooking until the chicken is no longer pink.
  4. Add the pasta, chicken broth, and heavy cream; bring to a boil.
  5. Reduce heat and let it simmer until the pasta is cooked through.
  6. Season with salt and pepper to taste.
  7. Serve warm, topped with parmesan cheese if desired.

Notes

For extra flavor, serve with a side salad or garlic bread. Leftovers can be stored in the fridge for up to three days.
