Ingredients

  • 1 pie crust
  • 2 cups heavy cream
  • 1 cup sugar
  • 5 large egg yolks
  • 1 teaspoon vanilla extract
  • 1/4 cup sugar (for caramelized topping)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Bake the pie crust according to package instructions until golden brown.
  3. Heat the heavy cream and 1 cup of sugar in a saucepan over medium heat until the sugar dissolves. Do not boil.
  4. Whisk together the egg yolks and vanilla extract in a bowl.
  5. Gradually add the warm cream mixture to the egg yolks while whisking continuously to prevent curdling.
  6. Pour the custard mixture into the baked pie crust.
  7. Bake in the preheated oven for about 30-35 minutes until set but slightly jiggly in the center.
  8. Let it cool to room temperature, then refrigerate for at least 4 hours.
  9. Sprinkle 1/4 cup of sugar evenly over the top before serving.
  10. Use a kitchen torch to caramelize the sugar until golden brown.
  11. Allow to sit for a minute, then slice and serve.

Notes

Chill properly for a smooth and creamy texture. Caramelize sugar topping just before serving.
