- 1 pie crust
- 2 cups heavy cream
- 1 cup sugar
- 5 large egg yolks
- 1 teaspoon vanilla extract
- 1/4 cup sugar (for caramelized topping)
Instructions
- Preheat the oven to 350°F (175°C).
- Bake the pie crust according to package instructions until golden brown.
- Heat the heavy cream and 1 cup of sugar in a saucepan over medium heat until the sugar dissolves. Do not boil.
- Whisk together the egg yolks and vanilla extract in a bowl.
- Gradually add the warm cream mixture to the egg yolks while whisking continuously to prevent curdling.
- Pour the custard mixture into the baked pie crust.
- Bake in the preheated oven for about 30-35 minutes until set but slightly jiggly in the center.
- Let it cool to room temperature, then refrigerate for at least 4 hours.
- Sprinkle 1/4 cup of sugar evenly over the top before serving.
- Use a kitchen torch to caramelize the sugar until golden brown.
- Allow to sit for a minute, then slice and serve.
Notes
Chill properly for a smooth and creamy texture. Caramelize sugar topping just before serving.
