Instructions
- Mix the gluten-free graham cracker crumbs, melted butter, and granulated sugar in a bowl.
- Press the mixture firmly into the bottom of a pie dish to form the crust.
- Bake the crust in a preheated oven at 350°F for about eight minutes.
- In another bowl, whisk together the sweetened condensed milk and egg yolks until smooth.
- Add the key lime juice and key lime zest to the mixture and stir well.
- Pour the filling into the pre-baked crust and bake for an additional twelve minutes.
- Allow the pie to cool to room temperature, then chill it in the refrigerator for three hours.
- Before serving, whip the heavy cream and powdered sugar together until soft peaks form. Spread this whipped cream over the pie.
- Slice and serve the pie while chilled.
Notes
For best flavor, use fresh key limes, but bottled key lime juice works too. Keep heavy cream cold before whipping. Experiment with toppings like fresh fruit or crushed gluten-free cookies.
