- 4 boneless, skinless chicken breasts
- 2 cups fresh spinach, chopped
- 8 ounces mushrooms, sliced
- 2 cloves garlic, minced
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- Salt and pepper to taste
- 1 tablespoon olive oil
- 1 teaspoon Italian seasoning
Instructions
- Preheat the oven to 375°F (190°C).
- In a large skillet, heat olive oil over medium heat. Add garlic and mushrooms, and sauté until mushrooms are tender.
- Stir in the chopped spinach and cook until wilted.
- In a bowl, mix heavy cream, Parmesan cheese, salt, pepper, and Italian seasoning.
- Place chicken breasts in a baking dish and pour the mushroom-spinach mixture on top.
- Pour the cream mixture over the chicken.
- Bake for 25-30 minutes or until the chicken is cooked through.
- Let cool for a few minutes before serving.
Notes
For extra flavor, consider marinating the chicken before cooking and using fresh spinach.
