- 4 large yellow onions
- 1 lb ground beef
- 1/2 cup breadcrumbs
- 1/4 cup diced cooked bacon
- 1/2 cup shredded cheddar cheese
- 1/4 cup diced jalapenos
- 1/4 cup barbecue sauce
- Salt and pepper to taste
Instructions
- Preheat your grill to medium-high heat.
- Cut the tops and bottoms off the onions, peel them, and cut a small hole in the top of each onion to remove the core.
- In a bowl, mix together the ground beef, breadcrumbs, bacon, cheddar cheese, jalapenos, barbecue sauce, salt, and pepper.
- Stuff each onion with the beef mixture, packing it tightly.
- Wrap each stuffed onion in aluminum foil, making sure they are fully sealed.
- Place the foil-wrapped onion bombs on the grill and cook for about 45 minutes, turning occasionally, until the onions are soft and the beef is cooked through.
- Carefully unwrap the onion bombs and place them back on the grill to char the outside slightly.
- Remove from the grill and let cool before serving.
Notes
Pair with a fresh salad or grilled veggies. Serve with extra barbecue sauce on the side.
