Instructions
- Preheat your oven to 400°F (200°C).
- Mix the garlic, butter, herbs, salt, and pepper in a bowl.

- Toss the diced potatoes with olive oil, salt, and pepper in another bowl.
- Place the chicken thighs on a baking sheet along with the potatoes.
- Bake in the preheated oven for 35-40 minutes, or until the chicken is cooked through and the potatoes are golden brown.
