A delicious and healthy twist on classic banana bread, made moist and fluffy with Greek yogurt.

  • 1 cup Greek yogurt
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 cup whole wheat flour

  • 1/2 teaspoon salt
  • 1/2 cup honey or maple syrup
  • Optional: chopped nuts or chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, mix the mashed bananas, Greek yogurt, eggs, and vanilla extract until smooth.
  3. In another bowl, combine the whole wheat flour, baking soda, baking powder, and salt.
  4. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  5. If desired, fold in the honey or maple syrup, and any optional ingredients like nuts or chocolate chips.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
  8. Let it cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely before slicing.

Notes

For best flavor, use very ripe bananas. Adjust the sweetness of the bread by varying the amount of honey or maple syrup.
