- 1.5 lb chicken thighs (cut into bite-sized pieces)
- 0.25 cup bourbon
- 0.25 cup soy sauce
- 0.25 cup brown sugar
- 2 tbsp apple cider vinegar
- 3 cloves garlic (minced)
- 1 tsp ginger (grated)
- 1 tbsp cornstarch
- 2 tbsp water
- 0.33 cup reserved marinade
- 2 tbsp oil (for heating on the griddle)
- 1 tbsp sesame seeds
- 1 green onion (chopped)
Instructions
- Make the bourbon marinade by mixing bourbon, soy sauce, brown sugar, apple cider vinegar, garlic, and ginger in a bowl. Reserve 1/3 of the marinade for later.
- Place the chicken thighs in the remaining marinade. Let them sit for at least 30 minutes.
- Heat oil on the Blackstone griddle over medium-high heat. Cook the chicken pieces until browned and cooked through, about 6-8 minutes.
- Mix cornstarch with water in a small bowl and add to the reserved marinade. Pour this into a pan and heat until it thickens into a glaze.
- Drizzle the thickened glaze over the cooked chicken and sprinkle with sesame seeds and chopped green onions.
Notes
For extra tenderness, marinate the chicken thighs for longer, even overnight if possible. Adjust the sweetness by adding more or less brown sugar according to your taste. Consider adding red pepper flakes to the marinade for heat.
