- 1 cup cornmeal
- 1 cup flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 cup milk
- 1/4 cup vegetable oil
- 2 large eggs
- 1 cup shredded cheddar cheese
- 1 cup roasted hatch chiles (chopped)
Instructions
- Preheat your oven to 400°F (200°C). Grease a 9-inch square baking pan.
- Whisk together cornmeal, flour, baking powder, and salt in a large bowl.
- Combine milk, vegetable oil, and eggs in another bowl. Mix well.
- Pour the wet ingredients into the dry ingredients, and stir just until combined.
- Fold in the cheese and chopped hatch chiles.
- Pour the batter into the prepared pan.
- Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean.
- Let cool slightly before cutting into squares and serving.
Notes
For a festive touch, sprinkle extra cheese on top before baking, or serve with fresh cilantro and diced tomatoes.
