Ingredients

  • 8 ounces elbow macaroni
  • 2 cups shredded cheddar cheese
  • 1 cup roasted hatch chiles, chopped
  • 2 cups milk
  • 1/4 cup butter
  • 1/4 cup all-purpose flour
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper (optional)

Instructions

  1. Cook the elbow macaroni according to package instructions; drain and set aside.
  2. In a large saucepan, melt butter over medium heat. Add garlic and cook until fragrant.
  3. Whisk in flour and cook for 1 minute, then slowly whisk in milk until smooth.
  4. Cook until the mixture thickens, then stir in cheddar cheese until melted.
  5. Mix in the roasted hatch chiles and season with salt, black pepper, and cayenne pepper if using.
  6. Combine the cheese sauce with the cooked macaroni, mixing well.
  7. Serve warm and enjoy!

Notes

For a baked version, top with breadcrumbs and extra cheese, then bake at 350°F for about 20 minutes.
