- 8 oz pasta
- 1 cup hatch chiles, roasted and peeled
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Cook pasta according to package instructions. Drain and set aside.
- Heat olive oil in a large skillet over medium heat. Add minced garlic and sauté until fragrant.
- Add the roasted hatch chiles and heavy cream to the skillet. Stir and cook for 3-4 minutes.
- Reduce heat to low, then add the grated Parmesan cheese and season with salt and pepper. Stir until the cheese is melted and the sauce is smooth.
- Toss the cooked pasta in the sauce until well-coated.
- Garnish with fresh cilantro and serve hot.
Notes
Adjust the amount of hatch chiles based on your spice preference. Can add more grated Parmesan for extra flavor.
