- 1 lb beef or pork (cubed)
- 2 cups hatch green chiles (roasted and diced)
- 1 onion (chopped)
- 2 cloves garlic (minced)
- 3 cups chicken or beef broth
- 2 cups potatoes (diced)
- 1 cup carrots (sliced)
- 1 tsp cumin
- 1 tsp oregano
- Salt and pepper to taste
Instructions
- Brown the cubed meat over medium heat until it’s cooked through.
- Add the onions and garlic, sautéing until the onions are translucent.
- Stir in the hatch green chiles, potatoes, and carrots.
- Pour in the broth and season with cumin, oregano, salt, and pepper.
- Bring the mixture to a boil, then reduce the heat to low and let it simmer for about 60 minutes, or until the vegetables are tender and the flavors meld.
- Serve warm and enjoy!
Notes
For extra flavor, marinate the meat in spices or broth for a few hours. Adjust the amount of Hatch green chiles based on your spice preference. Adding lime juice just before serving can enhance the flavors.
