- 1.5 lbs boneless, skinless chicken breasts (cut into cubes)
- 1 cup pineapple chunks (fresh or canned)
- 1 red bell pepper (chopped)
- 1 green bell pepper (chopped)
- ½ red onion (sliced)
- ½ cup Hawaiian BBQ sauce
- 2 tbsp soy sauce
- 1 tbsp sesame oil
- 1 tsp garlic powder
- Salt and pepper to taste
Instructions
- Preheat your grill to medium-high heat or oven to 400°F (200°C).
- Combine Hawaiian BBQ sauce, soy sauce, sesame oil, garlic powder, salt, and pepper in a mixing bowl.
- Add chicken cubes, pineapple chunks, bell peppers, and onion to the bowl. Toss until well coated.
- Cut four large pieces of aluminum foil (12×12 inches) and divide the mixture among the foil pieces.
- Fold the foil over the mixture and seal tightly.
- Cook on the grill or in the oven for about 20-25 minutes until chicken reaches an internal temperature of 165°F (75°C).
- Carefully open packets and serve over rice if desired.
Notes
For extra flavor, marinate the chicken in the sauce for an hour before cooking. Use a mix of different bell peppers for a colorful dish. Add chopped jalapeños or red pepper flakes for heat.
