Ingredients

  • 1.5 lbs boneless, skinless chicken breasts (cut into cubes)
  • 1 cup pineapple chunks (fresh or canned)
  • 1 red bell pepper (chopped)
  • 1 green bell pepper (chopped)
  • ½ red onion (sliced)
  • ½ cup Hawaiian BBQ sauce
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat your grill to medium-high heat or oven to 400°F (200°C).
  2. Combine Hawaiian BBQ sauce, soy sauce, sesame oil, garlic powder, salt, and pepper in a mixing bowl.
  3. Add chicken cubes, pineapple chunks, bell peppers, and onion to the bowl. Toss until well coated.
  4. Cut four large pieces of aluminum foil (12×12 inches) and divide the mixture among the foil pieces.
  5. Fold the foil over the mixture and seal tightly.
  6. Cook on the grill or in the oven for about 20-25 minutes until chicken reaches an internal temperature of 165°F (75°C).
  7. Carefully open packets and serve over rice if desired.

Notes

For extra flavor, marinate the chicken in the sauce for an hour before cooking. Use a mix of different bell peppers for a colorful dish. Add chopped jalapeños or red pepper flakes for heat.
