- 8 oz cream cheese, cubed
- 1 cup shredded cheddar cheese
Instructions
- Heat 1 tablespoon of olive oil in a large pot over medium heat until shimmering.
- Add 1 pound of ground turkey or chicken, breaking it apart. Cook until browned, about 5-7 minutes.
- Stir in 1 packet of taco seasoning, garlic powder, onion powder, cumin, salt, and black pepper. Coat the meat evenly with the spices.
- Pour in diced tomatoes, green chilies, and black beans along with chicken broth. Mix well.
- Bring the mixture to a gentle simmer, letting the flavors meld for about 10 minutes.
- Add the cubed cream cheese, stirring until it melts into a creamy delight.
- Fold in shredded cheddar cheese until melted and blended thoroughly. Taste and adjust seasoning as needed.
- Ladle the soup into bowls, garnishing with sour cream, fresh cilantro, and a squeeze of lime if desired.
Notes
For extra spice, add diced jalapeños or hot sauce. Store leftovers in an airtight container for up to 4 days.
