  • 1 pound ground turkey or chicken
  • 1 packet taco seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder

  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (4 oz) green chilies (optional)
  • 1 can (15 oz) black beans, drained and rinsed
  • 3 cups chicken broth
  • 8 oz cream cheese, cubed
  • 1 cup shredded cheddar cheese

Instructions

  1. Heat 1 tablespoon of olive oil in a large pot over medium heat until shimmering.
  2. Add 1 pound of ground turkey or chicken, breaking it apart. Cook until browned, about 5-7 minutes.
  3. Stir in 1 packet of taco seasoning, garlic powder, onion powder, cumin, salt, and black pepper. Coat the meat evenly with the spices.
  4. Pour in diced tomatoes, green chilies, and black beans along with chicken broth. Mix well.
  5. Bring the mixture to a gentle simmer, letting the flavors meld for about 10 minutes.
  6. Add the cubed cream cheese, stirring until it melts into a creamy delight.
  7. Fold in shredded cheddar cheese until melted and blended thoroughly. Taste and adjust seasoning as needed.
  8. Ladle the soup into bowls, garnishing with sour cream, fresh cilantro, and a squeeze of lime if desired.

Notes
