  • 2 tablespoons olive oil
  • 2 chicken breasts, diced
  • 1 packet Hidden Valley Ranch seasoning mix
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Chopped parsley for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add diced chicken, season with salt and pepper, and cook until golden brown (5-7 minutes).
  3. Sprinkle Hidden Valley Ranch seasoning over the chicken; stir well and cook for another 1-2 minutes.
  4. Pour in heavy cream and chicken broth; simmer until slightly thickened (3-5 minutes).
  5. Stir in cheddar and Parmesan until melted and smooth.
  6. Toss cooked penne pasta into the sauce; heat through for an additional 2 minutes.
  7. Serve hot, garnished with chopped parsley.

Notes

For a bit of spice, add red pepper flakes or diced jalapeños. You can use different types of pasta and substitute light cream or yogurt for heavy cream.
