- 1 cup cottage cheese (low-fat or full-fat)
- 1 cup whole wheat flour
- 1/2 cup rolled oats
- 1/4 cup protein powder (unflavored or vanilla)
- 1/4 cup honey or maple syrup
- 2 large eggs
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup shredded cheese (optional)
- 1/4 cup chopped herbs (optional)
- Cooking spray or parchment paper for baking
Instructions
- Preheat your oven to 375°F (190°C) and prepare a baking sheet by lining it with parchment paper or spraying it lightly with cooking spray.
- In a large mixing bowl, combine the cottage cheese, honey or maple syrup, and eggs. Whisk together until well blended.
- In another bowl, mix the whole wheat flour, rolled oats, protein powder, baking powder, baking soda, and salt until combined.
- Gradually add the dry mixture to the wet ingredients, stirring until just combined to create a thick dough. Make sure not to overmix.
- If using, fold in the shredded cheese and chopped herbs into the dough.
- Using a spoon or your hands, scoop out portions of the dough and shape them into biscuits about 1-inch thick. Place them on the prepared baking sheet, leaving space between each one.
- Bake in the preheated oven for 15-20 minutes or until the biscuits are golden brown and slightly firm to the touch.
- Once baked, remove from the oven and let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
- Serve warm or at room temperature, and enjoy!
