- 1 lb ground turkey or chicken
- 1 can black beans, drained and rinsed
- 1 can corn, drained
- 1 can diced tomatoes
- 1 packet taco seasoning
- 4 cups chicken or vegetable broth
- 1 cup Greek yogurt or sour cream
- 1 cup shredded cheese (optional)
- Salt and pepper to taste
- Chopped cilantro for garnish
Instructions
- Cook ground turkey or chicken in a large pot over medium heat until browned.
- Add taco seasoning and stir until well mixed.
- Pour in the broth and bring to a simmer.
- Add black beans, corn, and diced tomatoes.
- Simmer for 10-15 minutes.
- Stir in Greek yogurt or sour cream until well blended.
- Season with salt and pepper to taste.
- Serve hot, garnished with shredded cheese and cilantro.
Notes
Store the soup in an airtight container in the refrigerator for up to 4 days or freeze for up to 3 months. Thaw in the fridge overnight before reheating.
