- 2 cups cooked rice
- 1 lb chicken breast, diced
- 2 tablespoons garlic, minced
- 2 tablespoons soy sauce
- 2 tablespoons sesame oil
- 1 cup mixed vegetables (carrots, peas, corn)
- 2 eggs, beaten
- Green onions, chopped for garnish
- Salt and pepper to taste
Instructions
- Heat sesame oil over medium heat in a large skillet or wok.
- Add minced garlic and sauté until fragrant.
- Introduce diced chicken breast and cook until crispy and cooked through.
- Push the chicken to one side of the pan and pour the beaten eggs onto the other side. Scramble the eggs until cooked.
- Add the mixed vegetables and cooked rice to the pan.
- Pour in the soy sauce, stirring everything together.
- Season with salt and pepper to taste.
- Cook for another 3-4 minutes until everything is well mixed and heated through.
- Garnish with chopped green onions before serving.
Notes
Use cold, day-old rice for the best texture. Feel free to add your favorite vegetables or adjust the soy sauce to taste.
