- 4 Chicken thighs
- 1 cup Pineapple juice
- 1/2 cup Soy sauce
- 1/4 cup Brown sugar
- 2 tbsp Ginger, grated
- 2 cloves Garlic, minced
- 1/2 tsp Black pepper
- Rice, for serving
- Grilled pineapple, for serving
Instructions
- Mix pineapple juice, soy sauce, brown sugar, grated ginger, minced garlic, and black pepper to create the marinade.
- Marinate the chicken thighs in the mixture for at least 4 hours, preferably overnight.
- Preheat the grill to medium-high heat.
- Grill the marinated chicken thighs for 6-8 minutes on each side, or until fully cooked and caramelized.
- Serve the chicken with coconut rice or a fresh salad and grilled pineapple.
Notes
For extra flavor, marinate overnight. Keep an eye on the grill to avoid charring. Add red pepper flakes for spice.
