- 1 cup Mushrooms (Portobello or shiitake recommended)
- 1 medium Onion (Sweet varieties like Vidalia)
- 4 ounces Gouda Cheese (Can substitute with Gruyère)
- 4 slices Bread (Sourdough or whole grain)
- 2 tablespoons Butter (Vegan butter is a great alternative)
- 2 tablespoons Olive Oil (Can be swapped for melted butter or avocado oil)
- Salt and Pepper (Essential for enhancing flavors)
Instructions
- Preheat your oven to 400°F (200°C).
- Clean the mushrooms and slice them into thick pieces. Slice the onion into thin rings.
- Toss the mushrooms and onions in a bowl with olive oil, salt, and pepper.
- Spread them out on a baking sheet and roast in the oven for about 15-20 minutes, until they are tender and golden.
- Heat a skillet over medium heat.
- Butter one side of each slice of bread.
- Place two slices of bread in the skillet, buttered side down.
- Layer half of the Gouda cheese on each slice, followed by the roasted mushrooms and onions.
- Top with the remaining Gouda cheese and the other two slices of bread, buttered side up.
- Cook for about 4-5 minutes on each side, pressing down gently with a spatula, until the bread is golden and the cheese is melted.
- Remove from the skillet and let the sandwiches cool for a minute before slicing.
Notes
For an extra flavor boost, add garlic powder or fresh herbs before roasting the vegetables.
