  • 1 cup Mushrooms (Portobello or shiitake recommended)
  • 1 medium Onion (Sweet varieties like Vidalia)
  • 4 ounces Gouda Cheese (Can substitute with Gruyère)
  • 4 slices Bread (Sourdough or whole grain)
  • 2 tablespoons Butter (Vegan butter is a great alternative)
  • 2 tablespoons Olive Oil (Can be swapped for melted butter or avocado oil)
  • Salt and Pepper (Essential for enhancing flavors)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Clean the mushrooms and slice them into thick pieces. Slice the onion into thin rings.
  3. Toss the mushrooms and onions in a bowl with olive oil, salt, and pepper.
  4. Spread them out on a baking sheet and roast in the oven for about 15-20 minutes, until they are tender and golden.
  5. Heat a skillet over medium heat.
  6. Butter one side of each slice of bread.
  7. Place two slices of bread in the skillet, buttered side down.
  8. Layer half of the Gouda cheese on each slice, followed by the roasted mushrooms and onions.
  9. Top with the remaining Gouda cheese and the other two slices of bread, buttered side up.
  10. Cook for about 4-5 minutes on each side, pressing down gently with a spatula, until the bread is golden and the cheese is melted.
  11. Remove from the skillet and let the sandwiches cool for a minute before slicing.

Notes

For an extra flavor boost, add garlic powder or fresh herbs before roasting the vegetables.
