- 1 pound Ground Beef
- 2 tablespoons Gochujang
- 1 cup Mayo
- 1 tablespoon Toasted Sesame Oil
- 1 tablespoon Sugar
- 1 tablespoon Honey
- 1 tablespoon Vinegar
- 7 pieces Flour Tortillas
- 1 cup Kimchi
- 2 tablespoons Scallions
- 1 tablespoon Sesame Seeds
- 2 tablespoons Water
Instructions
- Mix the ground beef with gochujang, sesame oil, sugar, honey, and vinegar in a bowl. Stir until well combined.
- Heat a pan over medium-high heat. Add a little oil if needed.
- Form the beef mixture into small patties and place them in the pan. Smash them down with a spatula to create a burger shape.
- Cook for about 3-4 minutes on each side or until browned and cooked through.
- Mix the mayo with a little gochujang for a spicy mayo. Adjust the spice level to your liking.
- Warm the flour tortillas in a skillet or microwave.
- Assemble by spreading the spicy mayo on a tortilla, adding a beef patty, and topping with kimchi, scallions, and sesame seeds.
- Fold the tortilla and enjoy your delicious tacos!
Notes
For a lighter option, you can substitute ground beef with ground turkey or grilled mushrooms for a vegetarian version.
