  • 23 tbsp Creole/Cajun seasoning (to taste)
  • 1 tsp dried oregano
  • 0.5 tsp dried thyme
  • 0.5 tsp cayenne pepper
  • Salt (to taste)
  • Pepper (to taste)
  • 28 oz crushed tomatoes
  • 1 cup chicken broth
  • 12 oz frozen cooked shrimp (thawed)
  • 3 cups long grain rice (cooked)
  • Fresh chopped parsley (optional garnish)

Instructions

  1. Cube the chicken breasts and slice the andouille sausage. Toss them into your crockpot along with chopped celery, bell peppers, onion, and minced garlic for a flavor-packed base.
  2. Sprinkle in the Creole seasoning, dried oregano, thyme, cayenne, salt, and pepper. Stir everything together gently until the ingredients are well mixed and evenly coated.
  3. Pour in the crushed tomatoes and chicken broth. Stir again to combine, creating a beautiful, saucy blend that will infuse the dish with deep flavor.
  4. Cover the crockpot and set it to cook on low for 360 minutes or on high for 240-360 minutes, until the chicken is tender and the delicious aromas fill your kitchen.
  5. In the last 30 minutes of cooking, gently fold in the thawed shrimp. This will warm them through without losing their delicate texture.
  6. Dish out the jambalaya over a bed of fluffy cooked rice. Garnish with freshly chopped parsley for that lovely pop of color and freshness.

Notes
