  • 1 lb Ground Beef (80/20 blend)
  • 6 oz Ground Bacon
  • 1 cup Panko Bread Crumbs
  • 1/2 cup Milk
  • 1 large Egg
  • 1 medium Yellow Onion (finely diced)
  • 2 cloves Garlic (minced)
  • 1 tbsp Worcestershire Sauce
  • 1 tbsp Dijon Mustard
  • 1 tsp Smoked Paprika
  • 1 tsp Garlic Powder
  • 1 tsp Onion Powder
  • to taste Salt
  • to taste Black Pepper
  • 1 cup Sharp Cheddar Cheese (cubed)
  • 1/2 cup Mayonnaise
  • 1/4 cup Ketchup
  • 1 tbsp Yellow Mustard
  • 1 tbsp Sweet Pickle Relish
  • 1 tbsp White Vinegar
  • 6 pcs Sesame Seed Buns
  • to taste Vegetable Toppings (lettuce, tomato, red onion, and pickle chips)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine ground beef, ground bacon, panko bread crumbs, milk, egg, diced onion, minced garlic, Worcestershire sauce, Dijon mustard, smoked paprika, garlic powder, onion powder, salt, and black pepper.
  3. Mix everything together until well combined. Be careful not to over-mix.
  4. Gently fold in the cubed sharp cheddar cheese.
  5. Shape the mixture into meatballs about the size of a golf ball and place them on a lined baking sheet.
  6. Bake in the preheated oven for 20-25 minutes or until they are cooked through and a bit browned.
  7. While the meatballs are baking, mix together mayonnaise, ketchup, yellow mustard, sweet pickle relish, and white vinegar to create a sauce.
  8. Once the meatballs are ready, serve them warm on sesame seed buns, topped with your choice of lettuce, tomato, red onion, and pickle chips.

Notes

To keep meatballs juicy, use an 80/20 beef blend and don’t skip the bacon for added flavor. Customize toppings to taste.
