- 2 pounds Boneless, Skinless Chicken Breasts or Thighs
- 1 cup Ranch Dressing
- 3 cloves Fresh Garlic, minced
- 1/2 cup Grated Parmesan Cheese
- 6 pieces Wooden or Metal Skewers
- 1 handful Optional Fresh Herbs (e.g., Parsley or Thyme)
Instructions
- In a large bowl, mix the ranch dressing, minced garlic, and grated Parmesan cheese.
- Cut the chicken into bite-sized pieces and add them to the bowl. Stir well to coat the chicken in the marinade. Cover and let it marinate in the fridge for at least 30 minutes, or up to 2 hours for more flavor.
- Preheat your grill or oven. If grilling, heat to medium-high. For baking, preheat to 400°F (200°C).
- Thread the marinated chicken pieces onto the skewers. If using wooden skewers, make sure they have soaked in water for at least 30 minutes to prevent burning.
- Place the skewers on the grill or in the oven. Cook for about 10-15 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks or is golden in the oven.
- If desired, sprinkle with fresh herbs before serving.
Notes
For extra flavor, consider adding a squeeze of lemon juice to the marinade. Avoid overcrowding the skewers for even cooking.
