- 1 cup cream cheese, softened
- 2 tablespoons erythritol (or another keto-friendly sweetener)
- 1 tablespoon cinnamon
- 1/4 teaspoon vanilla extract
- 4 large eggs
- 1/2 cup almond flour
- 1 teaspoon baking powder
- Butter for cooking
Instructions
- Combine the softened cream cheese, erythritol, cinnamon, and vanilla extract in a mixing bowl until smooth.
- Beat the eggs in another bowl and mix in the almond flour and baking powder until well combined.
- Heat a non-stick skillet over medium heat and add a little butter.
- Pour a small amount of the egg mixture into the skillet, tilting to spread it evenly. Cook until the edges set, about 1-2 minutes.
- Spread a layer of the cream cheese mixture over the egg pancake, then roll it up.
- Cook for an additional 1-2 minutes, seam side down, until golden brown.
- Repeat steps until all the mixture is used.
- Serve warm and enjoy your guilt-free roll-ups!
Notes
These roll-ups can be stored in an airtight container in the refrigerator for 3-4 days. Reheat in the microwave for a few seconds before serving.
