- 1 cup water
- 1/2 cup unsalted butter
- 1 cup all-purpose flour
- 1/4 teaspoon salt
- 4 large eggs
- 1 cup heavy cream
- 1/4 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 tablespoon lemon juice
- 2 teaspoons lemon zest
Instructions
- Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
- In a saucepan, combine water and butter over medium heat until the butter melts.
- Stir in flour and salt until the mixture pulls away from the sides of the pan, for about 1 minute.
- Remove from heat and let cool for 5 minutes, then add eggs one at a time, mixing well after each addition.
- Drop spoonfuls of dough onto the prepared baking sheet, spacing them evenly.
- Bake for 20-25 minutes until they are golden and puffed up.
- Whip heavy cream and powdered sugar until stiff peaks form, then fold in vanilla extract, lemon juice, and lemon zest.
- Once the puffs are cool, cut them in half and fill with the lemon cream mixture.
Notes
Best served fresh and can be dusted with powdered sugar for presentation. Store leftovers in an airtight container in the fridge.
