Ingredients

  • 4 medium potatoes, peeled and diced
  • 1 cup ground beef or turkey
  • 1 packet taco seasoning
  • 1 cup shredded cheddar cheese
  • 1 cup sour cream
  • 1 cup corn (canned or frozen)
  • 1 avocado, diced
  • 1/2 cup diced tomatoes
  • 1/4 cup chopped green onions
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Boil the diced potatoes in salted water for about 10–15 minutes, or until they are tender.
  3. While the potatoes cook, heat a skillet over medium heat. Add a little olive oil and then the ground meat. Cook until browned, then drain excess fat.
  4. Stir in the taco seasoning with the cooked meat. Add a splash of water if needed. Let it simmer for a few minutes.
  5. Once the potatoes are ready, drain them and return them to the pot. Mash the potatoes gently and season with salt and pepper.
  6. In a large bowl, layer the mashed potatoes on the bottom, followed by the seasoned meat, corn, and cheese.
  7. Place the bowl in the oven and bake for about 10 minutes, or until the cheese is melted and bubbly.
  8. Remove the bowl from the oven and top with sour cream, avocado, tomatoes, and green onions.
  9. Serve warm and enjoy!

Notes

Use any ground meat you prefer, like chicken or plant-based options for a vegetarian version. Vary the cheese for different flavors.
