A delightful dessert combining sweet mangoes and creamy coconut, perfect for hot days.

Ingredients

  • 1/2 cup small tapioca pearls
  • 1 cup coconut milk
  • 1 cup milk
  • 23 ripe mangos, chopped
  • 1/41/3 cup sweetened condensed milk
  • 1 jar nata de coco (coconut jelly)

Instructions

  1. Bring a medium pot of water to a boil. Add the tapioca pearls and reduce the heat to medium-high. Keep the pearls moving in the water. Cook for 25-30 minutes until completely translucent.
  2. Rinse the cooked tapioca under cold water, then drain well. Transfer to a large bowl.
  3. Stir in the coconut milk, regular milk, chopped mango, sweetened condensed milk, and nata de coco. Add syrup from the jar if desired.
  4. Chill in the fridge for one hour or serve immediately.

Notes

Best enjoyed chilled and can be garnished with extra mango pieces or toasted coconut.
