Ingredients

  • 2 tablespoons gelatin (about 2 and a half packets)
  • 1/4 cup sugar
  • 1 cup boiling water
  • 1 can evaporated milk (12 oz / 354 ml)
  • 2 cups mango pulp (recommended: Kesar mangoes)
  • 1 tablespoon lemon juice

Instructions

  1. Get a large bowl that can fit all the ingredients.
  2. Add gelatin and sugar to the bowl. Pour in the boiling water and stir until everything dissolves. Let it sit for about 2 minutes to ensure it is fully dissolved.
  3. Add the rest of the ingredients to the bowl and whisk until the mixture is smooth.
  4. Now, the pudding is ready for refrigeration. You can either refrigerate it in the bowl, pour it into small ramekins, or use a silicone mold for a cube shape.
  5. Cover the bowl or containers with plastic wrap and refrigerate for at least 120 minutes until it is firm.

Notes

For best results, use ripe mangoes or canned mango pulp for convenience. Adjust the sweetness according to your taste.
