Ingredients

  • 1 cup Chopped Spinach
  • 1 cup Shredded Mozzarella
  • 1/2 cup Crumbled Feta Cheese
  • 1/2 cup Ricotta Cheese
  • 1/3 cup Sun-Dried Tomatoes
  • 1/4 cup Sliced Olives
  • 4 slices Whole Grain or Crusty Bread
  • 2 tablespoons Butter

Instructions

  1. In a bowl, mix together the chopped spinach, shredded mozzarella, crumbled feta, ricotta, sun-dried tomatoes, and sliced olives.
  2. Take two slices of bread and butter one side of each slice.
  3. Spread the cheese and spinach mixture evenly on the unbuttered side of one slice of bread. Cover it with the other slice, buttered side up.
  4. Heat a skillet over medium heat. Place the sandwich in the skillet and cook for about 3-4 minutes or until the bottom is golden brown.
  5. Carefully flip the sandwich and cook for another 3-4 minutes until the other side is golden and the cheese is melted.
  6. Remove from the skillet, let it cool slightly, and then cut in half.

Notes

Serve warm with a side of fresh salad or a cup of tomato soup. A sprinkle of extra feta or a drizzle of olive oil on top makes for a beautiful presentation.
