- 1 cup Chopped Spinach
- 1 cup Shredded Mozzarella
- 1/2 cup Crumbled Feta Cheese
- 1/2 cup Ricotta Cheese
- 1/3 cup Sun-Dried Tomatoes
- 1/4 cup Sliced Olives
- 4 slices Whole Grain or Crusty Bread
- 2 tablespoons Butter
Instructions
- In a bowl, mix together the chopped spinach, shredded mozzarella, crumbled feta, ricotta, sun-dried tomatoes, and sliced olives.
- Take two slices of bread and butter one side of each slice.
- Spread the cheese and spinach mixture evenly on the unbuttered side of one slice of bread. Cover it with the other slice, buttered side up.
- Heat a skillet over medium heat. Place the sandwich in the skillet and cook for about 3-4 minutes or until the bottom is golden brown.
- Carefully flip the sandwich and cook for another 3-4 minutes until the other side is golden and the cheese is melted.
- Remove from the skillet, let it cool slightly, and then cut in half.
Notes
Serve warm with a side of fresh salad or a cup of tomato soup. A sprinkle of extra feta or a drizzle of olive oil on top makes for a beautiful presentation.
