  • 1/2 teaspoon ground cinnamon (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5 inch loaf pan with butter or cooking spray and set aside.
  2. Whisk together the flour, baking soda, and salt in a medium bowl. Set the dry ingredients aside.
  3. Combine the melted butter and sugar in a large mixing bowl. Beat until well blended.
  4. Add the eggs and vanilla extract to the butter and sugar mixture, beating until smooth.
  5. Stir in the mashed bananas and sour cream or Greek yogurt until well combined.
  6. Fold the dry ingredients into the wet ingredients, mixing until just combined. Do not overmix, as this could lead to denser bread.
  7. Gently fold in the chopped nuts and ground cinnamon if using, until evenly distributed.
  8. Pour the batter into the prepared loaf pan, spreading it evenly.
  9. Bake for 60-65 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs. Avoid overbaking to ensure the bread remains moist.
  10. Remove the bread from the oven and allow it to cool in the pan for about 10 minutes. Then, transfer it to a wire rack to cool completely before slicing.
