Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×5 inch loaf pan with butter or cooking spray and set aside.
- Whisk together the flour, baking soda, and salt in a medium bowl. Set the dry ingredients aside.
- Combine the melted butter and sugar in a large mixing bowl. Beat until well blended.
- Add the eggs and vanilla extract to the butter and sugar mixture, beating until smooth.
- Stir in the mashed bananas and sour cream or Greek yogurt until well combined.
- Fold the dry ingredients into the wet ingredients, mixing until just combined. Do not overmix, as this could lead to denser bread.
- Gently fold in the chopped nuts and ground cinnamon if using, until evenly distributed.
- Pour the batter into the prepared loaf pan, spreading it evenly.
- Bake for 60-65 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs. Avoid overbaking to ensure the bread remains moist.
- Remove the bread from the oven and allow it to cool in the pan for about 10 minutes. Then, transfer it to a wire rack to cool completely before slicing.
Notes
For best flavor, ensure bananas are very ripe. Experiment with mix-ins like chocolate chips or dried fruits for a unique twist.
