A quick, filling, and flavorful dish combining sausage and rice with a sweet and tangy BBQ sauce.

Ingredients

  • 1 lb smoked sausage, sliced
  • 1 cup long-grain rice (uncooked)
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn (frozen or canned)
  • 1 cup bell peppers, diced
  • 1 onion, diced
  • 2 cups chicken or vegetable broth
  • ½ cup BBQ sauce
  • Garlic powder, paprika, salt, and pepper to taste

Instructions

  1. In a large skillet over medium heat, brown the sliced sausage for about 5-7 minutes.
  2. Add diced onion and bell peppers; sauté for an additional 3-4 minutes until softened.
  3. Stir in garlic powder, paprika, salt, and pepper; mix well.
  4. Add uncooked rice, black beans, corn, broth, and BBQ sauce; stir to combine.
  5. Bring to a boil then reduce heat to low. Cover and simmer for 20-25 minutes until rice is cooked.
  6. Remove from heat; let sit covered for 5 minutes before fluffing with a fork.

Notes
