- 1 lb smoked sausage, sliced
- 1 cup long-grain rice (uncooked)
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup corn (frozen or canned)
- 1 cup bell peppers, diced
- 1 onion, diced
- 2 cups chicken or vegetable broth
- ½ cup BBQ sauce
- Garlic powder, paprika, salt, and pepper to taste
Instructions
- In a large skillet over medium heat, brown the sliced sausage for about 5-7 minutes until nicely cooked.
- Add diced onion and bell peppers; sauté for an additional 3-4 minutes until softened.
- Stir in garlic powder, paprika, salt, and pepper; mix well to combine the flavors.
- Add uncooked rice, black beans, corn, broth, and BBQ sauce; stir gently to combine all ingredients.
- Bring the mixture to a boil, then reduce heat to low. Cover and simmer for 20-25 minutes until the rice is cooked through and has absorbed most of the liquid.
- Remove from heat; let it sit covered for 5 minutes before fluffing with a fork.
Notes
Serve hot, garnished with fresh herbs. Great for meal prep and can be stored in the fridge for up to 4 days or frozen for 2 months.
