Ingredients

  • 2 cups orzo pasta
  • 1 pound chicken breast, diced
  • 2 cups broccoli florets
  • 1 cup shredded cheese (cheddar or your choice)
  • 4 cups chicken broth
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Parmesan cheese for topping (optional)

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the diced chicken and cook until it is browned on the outside.
  3. Stir in the garlic powder, and sprinkle with salt and pepper.
  4. Add the orzo and broccoli, then pour in the chicken broth.
  5. Bring the mixture to a boil, then reduce the heat and let it simmer for about 10-12 minutes, or until the orzo is cooked and the liquid is absorbed.
  6. Stir in the shredded cheese until it melts and blends well into the dish.
  7. Serve hot with grated Parmesan cheese on top, if desired.

Notes
