- 1 lb chicken breast, sliced
- 12 oz fettuccine or penne pasta
- 2 cups chicken broth
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 2 tbsp Cajun seasoning
- 1 medium onion, diced
- 1 bell pepper, diced
- 2 cloves garlic, minced
- 2 tbsp olive oil
Instructions
- Heat olive oil in a large pot over medium heat. Add sliced chicken, season with salt, pepper, and 1 tablespoon of Cajun seasoning; cook until browned, about 5-7 minutes. Remove the chicken and set aside.
- In the same pot, add diced onion and bell pepper. Sauté for 3-4 minutes until softened, then add minced garlic and cook for an additional minute.
- Pour in the chicken broth and bring to a simmer. Add the pasta and the remaining Cajun seasoning. Cook according to package instructions, stirring occasionally, for about 10-12 minutes.
- Reduce the heat to low and stir in the heavy cream and Parmesan cheese until melted and creamy. Return the cooked chicken to the pot and mix well. Adjust seasoning if needed.
- Serve hot, garnished with fresh parsley if desired.
Notes
For a vegetarian version, simply omit the chicken and use vegetable broth instead.
