- 1 lb chicken breast, sliced
- 12 oz fettuccine or penne pasta
- 2 cups chicken broth
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 2 tbsp Cajun seasoning
- 1 medium onion, diced
- 1 bell pepper, diced
- 2 cloves garlic, minced
- 2 tbsp olive oil
Instructions
- Heat olive oil in a large pot over medium heat. Add sliced chicken and season with salt, pepper, and 1 tbsp Cajun seasoning. Cook until browned, about 5-7 minutes. Remove the chicken and set aside.
- In the same pot, sauté diced onion and bell pepper for 3-4 minutes until softened. Add minced garlic and cook for an additional minute.
- Pour in chicken broth and bring to a simmer. Add pasta and the remaining Cajun seasoning. Cook according to package instructions, typically 10-12 minutes, stirring occasionally.
- Reduce heat to low. Stir in heavy cream and Parmesan cheese until melted and creamy. Return the chicken to the pot, mix well, and adjust seasoning if needed.
- Serve hot, garnished with fresh parsley if desired.
Notes
Adjust Cajun seasoning to taste. Optional ingredients include cooked sausage, shrimp, and additional vegetables like spinach or broccoli.
