Ingredients

  • 1 lb chicken breast, sliced
  • 12 oz fettuccine or penne pasta
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 2 tbsp Cajun seasoning
  • 1 medium onion, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 2 tbsp olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat. Add sliced chicken and season with salt, pepper, and 1 tbsp Cajun seasoning. Cook until browned, about 5-7 minutes. Remove the chicken and set aside.
  2. In the same pot, sauté diced onion and bell pepper for 3-4 minutes until softened. Add minced garlic and cook for an additional minute.
  3. Pour in chicken broth and bring to a simmer. Add pasta and the remaining Cajun seasoning. Cook according to package instructions, typically 10-12 minutes, stirring occasionally.
  4. Reduce heat to low. Stir in heavy cream and Parmesan cheese until melted and creamy. Return the chicken to the pot, mix well, and adjust seasoning if needed.
  5. Serve hot, garnished with fresh parsley if desired.
