- 8 oz penne pasta
- 1 lb chicken breast, diced
- 2 cups chicken broth
- 1 cup heavy cream
- 1/2 cup buffalo sauce
- 1/2 cup shredded cheddar cheese
- Salt and pepper to taste
- 2 tablespoons olive oil
- Chopped green onions for garnish
Instructions
- Heat olive oil in a large pot over medium heat.
- Add the diced chicken and cook until browned.
- Stir in chicken broth and bring to a simmer.
- Add the penne pasta and cook according to package instructions.
- Once pasta is cooked, reduce the heat and add heavy cream and buffalo sauce.
- Stir in cheddar cheese until melted and creamy.
- Season with salt and pepper to taste.
- Serve hot and garnish with chopped green onions.
Notes
Adjust spiciness with more or less buffalo sauce. For a healthier version, use whole wheat or gluten-free pasta.
