Ingredients

  • 1 lb cooked chicken (shredded or diced)
  • 12 oz fettuccine or penne pasta
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1/2 cup buffalo sauce
  • 1 cup grated Parmesan cheese
  • 1/2 cup shredded mozzarella cheese
  • 2 tbsp cream cheese
  • Salt and pepper to taste

Instructions

  1. Heat olive oil or butter in a large deep pot over medium heat.
  2. Add the cooked chicken, seasoning it with garlic powder, salt, and pepper. Sauté for 2–3 minutes until fragrant.
  3. Pour in the chicken broth, heavy cream, and buffalo sauce. Stir to combine.
  4. Add the uncooked pasta directly into the mixture.
  5. Bring to a gentle boil, then reduce the heat to low and simmer uncovered for 10–12 minutes until the pasta is tender.
  6. Stir in the Parmesan cheese, mozzarella cheese, and cream cheese until melted and smooth.
  7. Adjust seasoning as needed. Garnish with chopped green onions or parsley before serving.

Notes

Stir occasionally to prevent pasta from sticking. Adjust buffalo sauce for desired spice level. For a thicker sauce, add more cream cheese or simmer longer.
