- 1 lb cooked chicken (shredded or diced)
- 12 oz fettuccine or penne pasta
- 2 cups chicken broth
- 1 cup heavy cream
- 1/2 cup buffalo sauce
- 1 cup grated Parmesan cheese
- 1/2 cup shredded mozzarella cheese
- 2 tbsp cream cheese
- Salt and pepper to taste
Instructions
- Heat olive oil or butter in a large deep pot over medium heat.
- Add the cooked chicken, seasoning it with garlic powder, salt, and pepper. Sauté for 2–3 minutes until fragrant.
- Pour in the chicken broth, heavy cream, and buffalo sauce. Stir to combine.
- Add the uncooked pasta directly into the mixture.
- Bring to a gentle boil, then reduce the heat to low and simmer uncovered for 10–12 minutes until the pasta is tender.
- Stir in the Parmesan cheese, mozzarella cheese, and cream cheese until melted and smooth.
- Adjust seasoning as needed. Garnish with chopped green onions or parsley before serving.
Notes
Stir occasionally to prevent pasta from sticking. Adjust buffalo sauce for desired spice level. For a thicker sauce, add more cream cheese or simmer longer.
