Ingredients

  • 1 ½ cups crushed vanilla wafer cookies
  • 5 tbsp unsalted butter, melted, plus extra for greasing
  • 2 tbsp granulated sugar (for crust)
  • 3 (8 oz) blocks full-fat cream cheese, softened
  • 1 cup granulated sugar (for filling)
  • 3 large eggs, room temperature
  • 1 cup full-fat sour cream, room temperature
  • 2 tbsp fresh orange zest
  • ¼ cup fresh orange juice
  • 1 tsp pure vanilla extract
  • ¼ tsp fine sea salt
  • 1 cup powdered sugar (for glaze)
  • 2 tbsp fresh orange juice (for glaze)
  • 1 tsp orange zest, for garnish (optional)

Instructions

  1. Preheat your oven to 350°F and grease a 9-inch springform pan.
  2. Combine the crushed vanilla wafers, 2 tablespoons of granulated sugar, and melted butter in a mixing bowl. Press this mixture into the bottom and 1 inch up the sides of the prepared pan.
  3. Bake the crust for 10 minutes, then let it cool completely.
  4. Beat the softened cream cheese with an electric mixer on medium speed for 2 minutes until smooth.
  5. Add 1 cup of granulated sugar and mix on low speed for 1 minute.
  6. Add the eggs one at a time, mixing just until each one is incorporated.
  7. Stir in the sour cream, orange zest, orange juice, vanilla extract, and salt until well combined.
  8. Pour the filling into the cooled crust and tap the pan gently to release any air bubbles.
  9. Wrap the pan in 2 layers of aluminum foil. Place it in a roasting pan and add hot water reaching about 1 inch up the sides of the cheesecake pan.
  10. Bake at 350°F for 75 minutes, or until the edges are set and the center jiggles slightly.
  11. Turn off the oven and crack the door open; let the cheesecake cool in the oven for 1 hour.
  12. Cool to room temperature on a wire rack for 2 hours.
  13. Chill in the fridge for at least 6 hours or overnight.
  14. Whisk together powdered sugar and 2 tablespoons of orange juice for a glaze, then pour over the chilled cheesecake.
  15. Garnish with extra orange zest if desired and serve cold.

Notes

Ensure all ingredients are at room temperature for best results. For added flavor, increase the amount of orange zest or juice.
