Pasta Primavera is a colorful and healthy dish that’s quick and easy to make, packed with fresh vegetables.

  • Total Time: 30 minutes
  • Yield: 4 servings 1x

Ingredients

Scale
  • 8 oz. pasta (penne or spaghetti)
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 zucchini, sliced
  • 1 bell pepper, diced
  • 1 carrot, sliced
  • 1 cup cherry tomatoes, halved
  • 1 cup broccoli florets
  • Salt and pepper to taste
  • Grated Parmesan cheese (optional)
  • Fresh basil for garnish (optional)

Instructions

  1. Cook the pasta according to package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat.
  3. Add minced garlic and sauté until fragrant.
  4. Add zucchini, bell pepper, carrot, broccoli, and cherry tomatoes. Cook until the vegetables are tender.
  5. Season with salt and pepper.
  6. Toss the cooked pasta with the vegetable mixture. Add additional olive oil if needed.
  7. Serve warm, topped with Parmesan cheese and fresh basil if desired.

Notes

Use seasonal vegetables for the best flavor and nutrition. You can add protein like grilled chicken or shrimp for a heartier meal. If there’s leftover pasta, add a splash of olive oil when reheating to keep it moist.
