  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 6 tbsp unsalted butter, melted
  • 24 oz cream cheese, softened
  • 3/4 cup granulated sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup sour cream
  • 3 cups peeled and sliced fresh peaches (about 3 medium peaches)
  • 2 tbsp granulated sugar
  • 1 tbsp cornstarch
  • 1/2 tsp cinnamon
  • 1/2 cup all-purpose flour
  • 1/2 cup rolled oats
  • 1/3 cup packed brown sugar
  • 1/4 tsp cinnamon
  • 1/4 cup cold unsalted butter, cubed

Instructions

  1. Preheat the oven to 325°F (163°C).
  2. Combine graham cracker crumbs and 1/4 cup of sugar in a bowl. Stir in the melted butter and press the mixture into the bottom of a 9-inch springform pan.
  3. Bake for 10 minutes and then let it cool.
  4. Toss the sliced peaches with 2 tablespoons of sugar, cornstarch, and cinnamon in another bowl. Let sit for about 10 minutes.
  5. Beat the softened cream cheese until smooth in a large bowl. Gradually add 3/4 cup of sugar while continuing to mix.
  6. Add the eggs one at a time, mixing on low speed, and then mix in the vanilla extract and sour cream.
  7. Pour the cream cheese filling over the cooled crust and spoon the peach mixture on top, pressing it gently into the mixture.
  8. Combine the flour, oats, brown sugar, and cinnamon in a separate bowl. Cut in the cold cubed butter until crumbly and sprinkle over the peach layer.
  9. Bake the cheesecake for 55 to 65 minutes or until the edges are set and the center jiggles slightly.
  10. Turn off the oven and crack the door, allowing it to cool in the oven for 1 hour. Then, cool completely on a rack and refrigerate for at least 4 hours or overnight.

Notes

For best flavor, use ripe peaches. Always soften cream cheese completely before mixing to avoid lumps.
