- 2 cups grated zucchini
- 1 cup crushed pineapple, drained
- 1/2 cup unsweetened applesauce
- 1/2 cup vegetable oil
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 3 large eggs
- 2 teaspoons vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1/2 cup chopped walnuts or pecans (optional)
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
- Mix together the grated zucchini, crushed pineapple, applesauce, vegetable oil, sugars, eggs, and vanilla until well combined.
- Whisk together the flour, baking soda, baking powder, cinnamon, and salt in another bowl.
- Gradually add the dry ingredients to the wet ingredients, stirring just until combined. If using, fold in the chopped nuts.
- Pour the batter into the prepared loaf pan.
- Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
- Allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
Notes
Make sure to drain the crushed pineapple well to avoid adding too much moisture. Grate the zucchini finely for a smoother texture. Chocolaty variations can include chocolate chips or dried fruits.
