Ingredients

  • 1/2 cup brown sugar, packed
  • 1/2 cup pumpkin puree
  • 1 egg

  • 3 cups all-purpose flour

  • 1 teaspoon cream of tartar
  • 1/2 teaspoon salt
  • 1 tablespoon ground cinnamon
  • 1/2 teaspoon pumpkin pie spice
  • 1/4 cup sugar (for rolling)
  • 1 tablespoon ground cinnamon (for rolling)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cream together the butter, sugar, and brown sugar until fluffy.
  3. Beat in the pumpkin puree, egg, and vanilla extract until well mixed.
  4. Whisk together flour, baking soda, cream of tartar, salt, cinnamon, and pumpkin pie spice in another bowl.
  5. Add the dry ingredients to the wet mixture, mixing until just combined.
  6. Mix together the 1/4 cup sugar and 1 tablespoon cinnamon for rolling in a small bowl.
  7. Roll the dough into balls and then roll them in the cinnamon-sugar mixture.
  8. Place dough balls on baking sheets lined with parchment paper, spaced about 2 inches apart.
  9. Bake for 10-12 minutes, or until the edges are golden and the centers are set.
  10. Cool on the baking sheets for a few minutes before transferring to wire racks to cool completely.

Notes
