- 1 whole pineapple, peeled, cored, and sliced into rings
- 120 ml dark rum
- 50 g brown sugar
- 30 g unsalted butter
- 1 tsp ground cinnamon
- 30 ml fresh lime juice
- 2 tbsp vegetable oil
Instructions
- Place the pineapple slices in a shallow bowl and pour the rum over them. Cover and refrigerate for at least 120 minutes.
- After marinating, remove the pineapple slices from the rum and set the rum aside.
- In a large skillet, melt the unsalted butter over medium heat. Stir in the brown sugar and ground cinnamon until the sugar dissolves and a caramel sauce forms.
- Add the vegetable oil to the skillet and heat until shimmering. Arrange the pineapple slices in a single layer in the skillet.
- Cook the pineapple slices for 2–3 minutes on each side or until they turn golden brown.
- Carefully pour the reserved rum and fresh lime juice into the skillet. You can ignite the mixture with a long lighter for a dramatic effect or let it simmer until the alcohol evaporates and the sauce thickens.
- Transfer the caramelized pineapple to serving plates and spoon any remaining sauce over the top.
Notes
Pair it with vanilla ice cream or whipped cream, and sprinkle with chopped mint for extra freshness.
