  • 3/4 cup brown sugar, packed
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup butterscotch chips
  • Flaky sea salt for sprinkling

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  3. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. Whisk together the flour, baking soda, and salt in another bowl. Gradually blend this dry mixture into the wet ingredients.
  5. Stir in the butterscotch chips.
  6. Drop dough by rounded tablespoons onto ungreased baking sheets, spacing them about 2 inches apart.
  7. Sprinkle a small pinch of flaky sea salt on top of each cookie.
  8. Bake for 10-12 minutes, or until the edges are golden and the centers are set.
  9. Allow to cool on the pan for a few minutes before transferring to wire racks to cool completely.
