A hearty turkey chili packed with protein and fiber, perfect for a healthy meal.

Ingredients

  • 1 lb ground turkey
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 can (28 oz) diced tomatoes, undrained
  • 1 can (6 oz) tomato paste
  • 2 cups chicken or vegetable broth
  • 2 tbsp chili powder
  • 1 tsp cumin
  • Salt and pepper, to taste
  • 1 tbsp olive oil

Instructions

  1. Heat 1 tablespoon of olive oil in a large pot over medium heat until shimmering.
  2. Add 1 diced onion and cook for about 5 minutes, until softened and fragrant.
  3. Stir in 2 minced garlic cloves and cook for an additional minute.
  4. Add 1 pound of ground turkey and cook until browned and no longer pink.
  5. Sprinkle in 2 tablespoons of chili powder, 1 teaspoon of cumin, and salt and pepper to taste, stirring for about 1 minute.
  6. Pour in 1 can of undrained diced tomatoes, 1 can of tomato paste, black beans, kidney beans, and broth, and mix well.
  7. Bring the mixture to a boil.
  8. Reduce the heat and let the chili simmer for 20 minutes, stirring occasionally.
  9. Taste and adjust seasoning if needed before serving.

Notes

Serve topped with green onions, cheese, or sour cream. Store leftovers in an airtight container.
