A delightful Puerto Rican dish that combines garlic shrimp and fluffy mofongo made from green plantains.

  • 2 medium Green Plantains (Choose slightly yellow for fluffier texture.)
  • 4 cloves Garlic (Adjust to taste.)
  • 3 tablespoons Olive Oil or Butter (Use based on preference.)
  • 1/2 cup Pork Cracklings (Chicharrón) (Optional for added crunch.)
  • 1 pound Medium Shrimp (Peeled and deveined.)
  • 1 teaspoon Salt
  • 1/2 teaspoon Pepper
  • 1 teaspoon Paprika (For extra kick.)
  • 1/4 cup Fresh Cilantro (Chopped.)
  • 2 wedges Lime (For squeezing.)

Instructions

  1. Start by peeling the green plantains and cutting them into 1-inch pieces.
  2. In a pot, bring water to a boil and add the plantain pieces. Cook for about 15-20 minutes until they are soft.
  3. While the plantains cook, heat olive oil or butter in a large skillet over medium heat. Add chopped garlic and sauté for 1-2 minutes until fragrant.
  4. Add the peeled shrimp to the skillet. Season with salt, pepper, and paprika. Cook for about 4-5 minutes until the shrimp are pink and cooked through.
  5. Once the plantains are cooked, drain the water and mash them in a bowl. Mix in the pork cracklings if using, and season with salt to taste.
  6. To serve, mold the mashed plantains into a bowl or mound shape on a plate. Fill the center with the garlic shrimp and top with chopped cilantro. Serve with lime wedges on the side.

Notes

Serve warm and squeeze lime juice over the dish for additional flavor. Pairs well with a side salad or refreshing beverage.
