- 1 lb Steak
- 2 medium Sweet potatoes
- 2 tbsp Olive oil
- Salt, to taste
- Pepper, to taste
- 4 cups Mixed greens
- 1 Avocado
- 1/4 cup Cilantro
- 2 tbsp Lime juice
- 2 cloves Garlic
Instructions
- Preheat the oven to 400°F (200°C).
- Cube the sweet potatoes and toss them with olive oil, salt, and pepper. Spread them on a baking sheet and roast for 20-25 minutes until tender.
- Season the steak with salt and pepper. Heat a skillet over high heat, add a little oil, and sear the steak for about 4-5 minutes on each side for medium-rare.
- Let the steak rest before slicing.
- To make the avocado-cilantro sauce, blend avocado, cilantro, lime juice, garlic, and a bit of water until smooth.
- Assemble the bowls with sliced steak, roasted sweet potatoes, mixed greens, and drizzle with the avocado-cilantro sauce.
- Customize with additional veggies or grains as desired.
Notes
For added crunch, sprinkle seeds or nuts on top before serving. To store, keep the sauce separate to maintain freshness.
