A delicious and customizable steak bowl featuring roasted sweet potatoes, fresh greens, and a creamy avocado-cilantro sauce.

Ingredients

  • 1 lb Steak
  • 2 medium Sweet potatoes
  • 2 tbsp Olive oil
  • Salt, to taste
  • Pepper, to taste
  • 4 cups Mixed greens
  • 1 Avocado
  • 1/4 cup Cilantro
  • 2 tbsp Lime juice
  • 2 cloves Garlic

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cube the sweet potatoes and toss them with olive oil, salt, and pepper. Spread them on a baking sheet and roast for 20-25 minutes until tender.
  3. Season the steak with salt and pepper. Heat a skillet over high heat, add a little oil, and sear the steak for about 4-5 minutes on each side for medium-rare.
  4. Let the steak rest before slicing.
  5. To make the avocado-cilantro sauce, blend avocado, cilantro, lime juice, garlic, and a bit of water until smooth.
  6. Assemble the bowls with sliced steak, roasted sweet potatoes, mixed greens, and drizzle with the avocado-cilantro sauce.
  7. Customize with additional veggies or grains as desired.

Notes

For added crunch, sprinkle seeds or nuts on top before serving. To store, keep the sauce separate to maintain freshness.
