- 3–4 lbs beef roast
- 2 tablespoons olive oil
- 1 onion, chopped
- 4 cloves garlic, minced
- 2 cups beef broth
- 1 tablespoon allspice
- 1 tablespoon dried thyme
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 bell pepper, chopped
- 2 carrots, sliced
- 2 potatoes, cubed
- 1 lime, juiced
Instructions
- Heat olive oil in a large skillet over medium-high heat. Sear the beef roast on all sides until browned.
- Transfer the roast to a slow cooker.
- In the same skillet, add the chopped onion and garlic, sautéing until softened.
- Pour in the beef broth, adding the allspice, thyme, salt, and pepper. Bring to a simmer.
- Pour the mixture over the roast in the slow cooker.
- Add the chopped bell pepper, carrots, and potatoes.
- Cover and cook on low for 480 minutes (8 hours) or until the meat is tender.
- Serve with rice or more veggies for a comforting meal.
Notes
For extra flavor, marinate the beef roast overnight with lime juice, garlic, and spices before cooking. If you want a thicker sauce, remove the roast after cooking and let the liquid boil to reduce.
