Ingredients

  • 2 whole trout
  • 2 tablespoons kosher salt
  • 1 tablespoon brown sugar
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 tablespoon olive oil
  • 1 lemon, sliced
  • 2 tablespoons fresh dill
  • 1 cup soaked wood chips

Instructions

  1. Dry the trout thoroughly with a paper towel.
  2. Mix kosher salt, brown sugar, black pepper, and garlic powder in a bowl. Season the trout with this mixture.
  3. Place the seasoned fish in the refrigerator for about 30 minutes.
  4. Preheat your oven and prepare your wood chips for smoking.
  5. After resting, brush the trout with olive oil. Top the trout with lemon slices and fresh dill.
  6. Smoke the trout at a low temperature until it flakes easily with a fork, usually about 60 to 120 minutes.
  7. Once done, let the smoked trout rest for a few minutes before serving.
