- 2 whole trout
- 2 tablespoons kosher salt
- 1 tablespoon brown sugar
- 1 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 tablespoon olive oil
- 1 lemon, sliced
- 2 tablespoons fresh dill
- 1 cup soaked wood chips
Instructions
- Dry the trout thoroughly with a paper towel.
- Mix kosher salt, brown sugar, black pepper, and garlic powder in a bowl. Season the trout with this mixture.
- Place the seasoned fish in the refrigerator for about 30 minutes.
- Preheat your oven and prepare your wood chips for smoking.
- After resting, brush the trout with olive oil. Top the trout with lemon slices and fresh dill.
- Smoke the trout at a low temperature until it flakes easily with a fork, usually about 60 to 120 minutes.
- Once done, let the smoked trout rest for a few minutes before serving.
Notes
Make sure to use fresh trout for the best taste. Soak your wood chips prior to use for better results.
